SUMAC Chicken

Step 1: Using paper towels, pat the chicken dry and season with salt and pepper. Heat a pan on medium-high heat and add 1-2 tablespoons of olive oil. Add the onions, cooking them down until they begin to brown.

Step 2: Then add the garlic and chopped pine nuts. Add sumac and paprika. Cook until fragrant (30-60 seconds), then add the water or chicken broth and stir to combine.

Step 3: Add the chicken thighs, bring to a boil, then reduce to a simmer. Reduce heat to medium-low and simmer for 25-30 minutes covered.

Step 4: While chicken is simmering, you can make a quick hummus or if you've made dough for skillet bread, this is a great time to cook it.

Step 5: Using 2 forks, shred the chicken into bite-sized pieces and bring the liquid in the pot to a simmer until the moisture has evaporated (10-15 minutes).

Step 6: Chop and stir the parsley into the chicken and serve on skillet bread with a dollop of yogurt and pickled red onion.
