A favorite recipe for cheesy jalapeño rolls that are airy and delicious! These rolls are a perfect side to chili, jambalaya, or any BBQ dish. Adapted from Paul Prudhomme, these rolls are easy to make and sure to impress.
Combine all of your dry ingredients (flour, cheese, jalapeno, all but 1 Tbsp. of sugar, and salt), and mix well.
Combine the dry yeast with the warm water and 1 Tbsp. sugar, stir to dissolve, and let rest for 3-10 minutes until the yeast activates.
Add half of the yeast and water mixture to the flour and knead until incorporated, then add the rest of the liquid and knead until totally smooth (about 10 minutes).
Cover the dough and allow it to rise for 1 hour.
Portion your dough into round balls and place them in a buttered 10.5" cast iron skillet. Cover and let rest in a warm place for another hour until they have doubled in size.
Bake at 325°F for 1 hour. Allow to rest for 10 minutes before serving.
