These quick and simple scallion noodles are easy to make and bursting with flavor, topped with chili crisp. This dish uses soba or egg noodles, scallions, serrano peppers, and ground pork for a delicious meal.
In a ball jar, combine soy sauce, rice vinegar, brown sugar, and sesame oil. Cap with the lid and shake, or whisk in a bowl.
In a skillet, heat 1 tablespoon of oil over medium/high heat, then add the ground pork and serrano peppers, breaking it up to brown and cook through. Remove and set aside when cooked.
In the same skillet, add 2 tablespoons of oil and add the scallion whites, allowing them to fry until slightly colored. Remove and set aside.
Fill a large pot with 4 quarts of water and bring to a boil. Cook the noodles until al dente based on packaging instructions, then drain and rinse with cold water. Toss with a little oil to prevent sticking.
Heat the skillet again to medium heat and add the pork, peppers, and half of the sauce. When bubbling, add the noodles and fried scallion whites. Toss together and taste; add more sauce if desired.
Finally, add the scallion greens, toss, and serve. Optional toppings include chili crisp and a fried egg.
