These Personal Skillet Brownies are a quick and rich dessert, perfect for making ahead and baking just before serving. Made with a blend of semisweet and 60% dark chocolate, they are served in mini skillets and topped with ice cream.
Step 1: Pre-heat your oven to 350°F.
Step 2: Combine butter and chocolate (reserving 1/2 cup of chocolate chips for later) in a bowl.
Step 3: Using a double boiler method, heat water over medium heat in a small pot. Place the bowl of chocolate and butter over the water and stir occasionally until fully melted and combined. Allow to cool for 15-20 minutes.
Step 4: Combine the dry ingredients (baking powder, salt, and flour) in a separate bowl and mix well.
Step 5: In another bowl, combine the eggs and vanilla, stirring to incorporate. Then add the sugar and mix until incorporated.
Step 6: Combine the 1/2 cup of chocolate chips with the 1 tablespoon of flour. Add the dry ingredients and the chocolate chips to the cooled chocolate and butter mixture, folding to combine until there are no lumps. Then add the egg mixture and stir to combine.
Step 7: Divide the batter among mini skillets and bake for 22 minutes. If baking from the fridge, bake for 24 minutes.
Step 8: Finish with Maldon sea salt and a scoop of ice cream.
