A simple and delicious cake made with unsalted butter, granulated sugar, eggs, flour, and a hint of almond and vanilla extracts, topped with pear slices and sliced almonds, perfect for a sweet breakfast.
Step 1: Preheat oven to 350°F. Butter a 10.5” cast-iron skillet with baking spray with flour.
Step 2: In a stand mixer, beat butter and granulated sugar at medium speed until fluffy, about 3 to 4 minutes. Scrape sides of bowl.
Step 3: Add eggs one at a time, beating well after each addition.
Step 4: In a small bowl, whisk together flour and salt. Gradually add flour mixture to butter mixture alternately with milk, beginning and ending with flour mixture. Beat in extracts.
Step 5: Spoon batter into prepared pan. Place pear slices cut side down in a pinwheel fashion over batter.
Step 6: Bake until lightly browned, 25 to 30 minutes. Sprinkle with sliced almonds, and bake until a wooden pick inserted in center comes out clean, 10 to 15 minutes more.
Step 7: Let cool in pan for 15 minutes.
