A simple but delicious pasta dish featuring garlic two ways: sliced for a mellow flavor and minced for a strong punch. Cooked with broccoli and red pepper flakes for a delightful vegetarian meal.
Salt a large pot of water and bring to a rolling boil.
Heat a pan over medium heat and add olive oil. When the oil begins to shimmer, add the sliced garlic and red pepper flakes, stirring frequently to avoid burning until golden brown. Turn to low heat.
Drop your pasta into the boiling water according to the package instructions. For the last 4-5 minutes of cooking, add the broccoli to the pot of pasta and water.
Add 1 cup of pasta water to the garlic and oil mixture, then add the pasta and broccoli along with the remaining clove of minced garlic. Stir until the pasta absorbs the water.
Serve with pecorino romano or parmesan reggiano.
