Lobster Rolls

1: Bring a large pot of water to a boil. Once boiling, add your brined lobster tail and boil it for 1 minute per ounce; for a 1.3 lbs lobster tail, cook for 19 minutes.

2: While your lobster cooks, prepare an ice bath. When the timer goes off, plunge your lobster into the ice bath to stop the cooking process.

3: Once cool to touch, open the lobster using kitchen sheers. Cut the sides then the base by the tail. The belly should pull off easily, then peel the top shell off.

4: Chop the lobster into 1/2" chunks and combine with the mayo, scallions, tarragon, and celery. Cover and refrigerate until ready to serve.
