Step 1: Combine milk, water, and sugar in a microwave-safe bowl and warm in the microwave for 20 seconds so it's just slightly warm.
Step 2: Add yeast to the warmed mixture and set aside to activate.
Step 3: In a bowl fitted with the paddle dough hook attachment, combine flour and salt.
Step 4: Add the egg and melted butter into the milk mixture and pour into the flour and salt.
Step 5: Knead the dough on medium/low speed for about 10 minutes until it’s smooth.
Step 6: Cover the dough with plastic wrap and set aside to rise until doubled in size (about an hour).
Step 7: Transfer the dough to a floured counter and roll out to about 1/2 inch thick.
Step 8: Line a sheet tray with parchment and sprinkle semolina flour for resting the muffins.
Step 9: Using a round cookie cutter, cut out the muffins and transfer them to the sheet tray.
Step 10: Heat a griddle over medium-high heat and add the muffins once hot.
Step 11: Flip the muffins once browned on one side and finish cooking on the other.
Step 12: Set aside to let them cool before slicing and freezing or enjoy them hot.
