Croque Madame is a classic, delicious sandwich made with Turano Rustic Italian bread, Mornay sauce, and topped with a fried egg. It's an irresistible addition to your breakfast or brunch repertoire.
Step 1: Add 1 tablespoon of butter to a skillet and toast one side of your bread; remove and set aside.
Step 2: In a small saucepan, add the remaining butter; when it melts, add the flour, stirring constantly to make a roux for about 2 minutes until you can no longer smell raw flour.
Step 3: Add the milk to the roux and bring to a boil, whisking until the sauce thickens.
Step 4: Add nutmeg, black pepper, and about 1/2 teaspoon of salt to the sauce.
Step 5: Off the heat, add 1/4 cup of the grated gruyere, whisking until a smooth Mornay sauce is created.
Step 6: Taste the sauce for salt and adjust as needed; set aside.
Step 7: Assemble the sandwich by spreading Mornay sauce on one non-toasted side of the bread, add more grated gruyere, then the Jamon de Paris.
Step 8: On the second slice of bread, spread a thin layer of Dijon mustard on the non-toasted side and complete your sandwich by placing it on top of the jamon de paris.
Step 9: Add more Mornay sauce on the toasted top of the sandwich followed by more gruyere.
Step 10: Set your oven rack about 10 inches from the broiler and broil the sandwich until the top is browned and bubbly.
Step 11: While the sandwich is broiling, quickly fry an egg to slide on top when it comes out of the oven.
Step 12: Finish with some chives and enjoy.
