A Chicken Saltimbocca Burger features ground chicken mixed with sage and prosciutto, topped with provolone cheese and served on a toasted brioche bun, drizzled with lemon pepper mayo and fresh arugula.
Step 1: Preheat your oven to 400° and tear up one brioche bun onto a sheet tray. Bake for about 10-15 minutes until crunchy. Remove and set aside to cool.
Step 2: Once the bun is cool, add to a food processor and pulse to make bread crumbs.
Step 3: Combine bread crumbs with ground chicken, 1 egg, 1 tsp salt, and 1/2 tsp pepper. Mix well and form into 2-3 patties.
Step 4: Combine mayo, juice of 1/2 lemon, and 1/2 tsp pepper and set aside.
Step 5: Turn the oven to 450° and lay prosciutto on a sheet tray. Bake for 10 minutes, flip, and bake for another 8-10 minutes until crispy. Remove and set aside.
Step 6: Cover one side of each patty with sage leaves. Heat about 3 tbsp oil in a skillet over medium/high heat. When hot, add the patties sage side down.
Step 7: Fry the sage for about 1-2 minutes until browning, then flip the patties and lower heat to medium-low. Cook for about 7-8 minutes, adding a slice of provolone on top.
Step 8: Add about 1 tsp water to the skillet and cover to allow the cheese to melt, ensuring the internal temperature registers at 165°.
Step 9: In the same skillet, add butter and cook the lemons until softened and charred. Remove the lemons and toast the brioche buns in the pan.
Step 10: Assemble the burger by spreading lemon pepper mayo on both sides of the bun, followed by charred lemons, arugula, the burger, crispy prosciutto, and the top bun.
