Cast Iron Deep Dish Pizza

Step 1: Combine warm water, active dry yeast, and sugar in a stand mixer and let it activate for a few minutes.

Step 2: Add EVOO, all-purpose flour, baking powder, and salt to the mixture.

Step 3: Using a dough hook attachment, knead the dough until it comes together and gluten strands have formed (about 5-8 minutes).

Step 4: Cover the dough and allow it to rise for about an hour in a warm place.

Step 5: Once the dough has risen, add EVOO to a 12.5” cast iron skillet and add the dough, pressing it out to the edges of the pan.

Step 6: Add your vegetables, sausage, or toppings of your choice.

Step 7: Top with whole milk mozzarella and San Marzano tomatoes (drained and spiced with oregano, garlic powder, onion powder, and salt).

Step 8: Bake at 500°F on the bottom rack of your oven for about 25 minutes.
