This cozy dessert is delicious and quick to prepare. Bourbon roasted peaches are perfect as a make-ahead dessert for Thanksgiving or to serve at a friend's dinner. Serve warm with fresh whipped cream or vanilla ice cream for a delightful treat.
Step 1: Preheat oven to 425°F.
Step 2: Place the peaches stem-side down in a 10.5” cast iron skillet and poke the back side of each peach with a fork to prevent bursting.
Step 3: In a microwave-safe measuring cup, combine water, brown sugar, and the cinnamon stick. Microwave until it boils (about 3 minutes), stirring to ensure the sugar melts.
Step 4: Stir in the butter, vanilla, and bourbon, then remove the cinnamon stick and pour the sauce over the peaches.
Step 5: Roast the peaches in the oven for 10 minutes, then baste them with the sauce.
Step 6: Return them to the oven and roast for another 25 minutes until tender enough to pierce with a fork.
Step 7: Remove the peaches from the oven and toast the almonds in the oven for about 6 minutes until lightly toasted.
Step 8: Serve the peaches warm with ice cream or fresh whipped cream or refrigerate until ready to serve.
