Almond Checkerboard Cookies

1: Cream butter, sugar, and salt together.

2: Add egg yolks, finely ground almonds, and vanilla to the mixture, then stir in flour.

3: Repeat the mixing process for the chocolate dough, adding cocoa with the almonds.

4: Chill both doughs for at least 30 minutes or overnight.

5: Roll out the dough to 1/2 inch thick and cut into 1/2 inch strips.

6: Use reserved egg whites to brush one strip of vanilla dough and place it next to a strip of chocolate dough.

7: Brush the chocolate dough with egg white wash and add a vanilla strip.

8: Continue alternating the chocolate and vanilla strips, eggwashing each piece until you have created 3 rows of 3 strips.

9: Eggwash the outside and wrap the assembled dough in parchment for 30 minutes.

10: Slice and bake at 375°F for 15-18 minutes.
